Chia seeds are a nutritious and delicious addition to virtually every meal. Whether blended into breakfast smoothies or baked into scrumptious desserts, chia seeds contain healthy doses of calcium, fiber and antioxidants. If you are looking for ways to take chia seeds to the next level, you have come to the right place. While chia seeds have been part of the Aztec and Mayan diets for centuries, they’ve been receiving a lot of attention recently.

Cherry Chia Seed Pudding

This is the epitome of chia seed puddings. Not only is it decadent, but it’s also easy to prepare. Simply blend two cups almond milk, one teaspoon stevia, cherries to taste and one teaspoon of vanilla together. Mix in half a cup of chia seeds, cover and refrigerate for at least three hours. Before serving, stir thoroughly and divide into equal portions. Top with whip cream, cherries and chopped nuts. If you aren’t a fan of cherries, you can easily substitute with strawberries.

Lemon Poppy Loaf

What do you do when life gives you lemons? You add chia seeds to make this delicious lemon loaf. This modern version of lemon pound cake zaps the fat content by swapping butter with coconut oil and adds chia seeds as well. Creamy yogurt keeps your cake super moist while the zest of two lemons gives you a rich lemony flavor.

Kick Breakfast Up a Notch

Say goodbye to bland yogurt and hello to flavorful breakfast pudding. Soak one-half cup chia seeds in two cups unsweetened almond milk mixed with one-half teaspoon vanilla extract. Refrigerate overnight and in the morning, top with your favorite seasonal fruit. This recipe can easily be doubled so you have enough to enjoy the entire week.

Chia seeds can be transformed into marvelous spreads to kick up your average marmalade. Simply blend with berries and stevia for homemade jam in a pinch.
